Optional test-two tweak: if you want a fuller mascarpone vibe, fold in 12–15g light cream cheese after the first respin. Keep it out of version-one macros so the base stays clean and repeatable.
Instructions
Blend milk, skyr, isolate, espresso powder, vanilla extract, rum extract, sweetener, xanthan gum and salt until completely smooth. The liquid base should taste a little sweeter and a little stronger on coffee than you want in the finished pint.
Pour into the Creami tub, stay under the correct fill line, and freeze flat for 24 hours.
Before spinning, let the tub sit out for 5 minutes or warm the outside briefly under warm water. Flatten any hump on top if needed.
Spin on Lite Ice Cream. If it comes out crumbly, re-spin once. If it is still a touch dry, add 1 tbsp milk and re-spin again.
Dig a centre well, add the crushed biscuit, and run Mix-In. Finish with a light cocoa dusting just before serving.
