Instant espresso powder is the key move here — more café flavour, less extra water, fewer icy crystals.

Instructions

Blend milk, almond milk, isolate, cocoa powder, espresso powder, vanilla extract, sweetener, xanthan gum and salt until completely smooth and fully dissolved.

Freeze for 24 hours on a level surface. Lid off or loosely covered helps keep the top flatter.

Run the outside under warm water for 30–60 seconds, then spin on Lite Ice Cream.

If the first spin looks powdery or crumbly, add 1–2 tbsp milk and re-spin once.

Add mini dark chocolate chips and run Mix-In. If you want more coffee next time, raise espresso by ½ tsp before adding any more liquid coffee.

Watch-out: too much espresso can turn the pint bitter fast. Keep the cocoa as the supporting note, not the lead flavour.
